These carrots are the perfect addition for your next meal because they’re quick, easy, and delicious. When I was younger, one of my favorite sides was boiled carrots, that were then seasoned with simple butter, salt and pepper. This is my spin on that classic. They’re become super sweet from the natural sugars in the carrot and caramel-like from the maple syrup. I added some thyme for a little bitterness to counteract the all the sweetness going on. They were just so good and you have to make them. They’re perfect because you basically just throw them in the oven, and are a great side to roasted chicken, steak, fish, nearly everything. These could also be a great side for Thanksgiving or any holiday for that matter.

The carrots used here are some I found at Trader Joe’s, they were just so colorful and pretty that I had to get them. I feel like they’re something you see in a NYT Cooking article or something fancy like that. Obviously though, not everywhere carries them, so feel free to use regular carrots or even baby carrots would work, as long as they’re one pound!

the process

I melted some butter in the microwave, and mixed in some olive oil, thyme, salt, pepper, and maple syrup. You could add some bourbon (about 2 tablespoons) here to make some Maple Bourbon carrots, those would be really good too! You basically just mix the carrots with the oil mixture, place them on a sheet pan and roast for 25 minutes.

These are the perfect addition to any main course. I especially like them with roasted chicken. You could get a rotisserie chicken for a super easy and delicious weekday meal.

Maple Thyme Roasted Carrots

Ingredients

  • 1 lb. carrots
  • 2 tablespoons melted butter
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves (about 5 sprigs)
  • 2 tablespoons maple syrup
  • Kosher salt and black pepper to taste

Instructions

  1. Preheat oven to 400ºF.
  2. Combine melted butter, olive oil, thyme, maple syrup, salt, and pepper. Stir.
  3. Toss together carrots and oil mixture. Spread carrots over a sheet pan and roast for 25 minutes or until soft and slightly browned. Remove from oven and serve. Enjoy!
